Course Objectives: | The purpose of this course is to demonstrate a detailed knowledge on individual food components. |
Course Content: | Water, carbohydrates, proteins, and lipids, giving particular attention to their chemical structures and reactions and to the role of each component on food quality. Throughout the laboratory analysis, students will be able to analyze food materials for their principle components and determine some specific reactions of these components. |
